Snuff films are a form of "entertainment", simply featuring a human being murdered.
As of the new Bikers update you can buy foreclosed properties, one of them is mentioned to have been "The Heart and Soul of the Los Santos Snuff industry" and there isn't any other signs of Snuff Films in the game, other than the strange building mentioned on the site, which is supposed to be the filming location, where the films are made.
